Knead an even mixture from the butter, sugar, egg yolks, flour and lemon zest. Wrap in aluminum foil and refrigerate for 1-2 hours.
Then roll out the dough into a rectangular shape (not too thin). The dough shouldn`t be too soft. Then cut the dough into strips about 1 cm wide. (This is best done with a ruler and the pizza cutter!) Then cut the strips into approx. 3 cm long sticks.
Place the sticks on a baking sheet lined with parchment paper. Bake at 180 degrees in a preheated oven for about 8-10 minutes always depends on the thickness of the dough.
Dip half of the cooled sticks in the lemon glaze and place them on a board to cool. Then use a parchment bag (or a freezer bag) to decorate with chocolate couverture. (Pour the liquid chocolate into a parchment bag and cut off a tiny corner )
The lemon sticks are tasty not only at Christmas, but also in summer.
