In dingy, cold weather, a spicy curry is just the thing. This delicious lentil curry is a feel-good recipe for the soul and very easy to make. It`s also unintentionally vegan.
1. The rice is boiled in salted water for about 30 minutes. Can be shorter for peeled white rice.
2. During this time, the onion and garlic are peeled and cut into fine cubes.
3. Heat a pan, add a little oil and sauté the onion and garlic.
4. Drain the lentils and add them to the pan, heat the coconut milk and everything.
5. Stir in the curry paste and let the coconut milk reduce.
6. The ginger is peeled and cut into small pieces or grated, as is the carrot and the passata added and stirred in.
7. Season the curry with salt, pepper and a pinch of sugar.
8. Serve the curry with rice.
