Instructions

  1. First weigh 50 g butter and melt it in a saucepan on the stove or in the microwave. Meanwhile, puree the buttermilk with the bananas.
  2. Put the flour in a bowl, add the 2 eggs, the bourbon vanilla sugar, the pureed banana milk and the sparkling water. Vigorously stir everything with a whisk to a smooth mass. Pour in the melted butter and stir everything again to a smooth dough.
  3. Thanks to the butter in the dough, the pancakes no longer have to be fried in fat, the fat in the dough is completely sufficient and thus saves a lot of fat.
  4. Let a non-stick pan get hot and add a ladle of batter. By swirling the pan, distribute the blob of dough throughout the pan. As soon as the edge of the crepe has loosened from the pan, it can be turned with a spatula. Bake all of the pancakes like this and stack them in a stack. The batter is enough for about 12 pancakes when using a normal sized pan.
  5. The orange quark can be mixed between the baking times of the crêpes.
  6. To do this, simply put the yoghurt and quark in a bowl and stir well with honey and cinnamon to a smooth mass. Peel the oranges, cut them into pieces and add them.
  7. The quark is a delicious, light and summery filling for the crepes.
  8. The amount is enough for 8 - 9 crepes, if you want, you can also mix more quark.
