Peel the onions and garlic cloves, chop them with the red chilli pepper and sauté in the oil. Then you add 800ml stock, then add the peeled and diced pumpkin (Hokkaido). You let the whole thing simmer for about 20-25 minutes.
Then you puree everything and taste the delicious soup with salt and pepper.
Mix the sour cream with the chives. And then serve the pumpkin soup with a dollop of chive cream.
