Instructions

  1. Mix the flour, starch and baking powder in a bowl and set aside.
  2. Separate the eggs and beat the egg white with a pinch of salt until stiff. Put in a cool place.
  3. In another bowl, beat the soft but not runny butter with the sugar and vanilla sugar on the highest setting for a good 3 minutes. Now gradually add the egg yolks. Beat each egg yolk for 30 seconds, then add the next egg yolk.
  4. Now, alternating between the flour mixture and milk, gradually add to the butter-egg mixture and continue beating on the lowest setting. Finally, carefully fold in the egg whites. The dough should not be too thick or too runny at the end. If this is not the case, add a little more soda or some flour.
  5. After all the ingredients have been mixed together, cover the bowl and let the dough rest in a warm place for a good 30 minutes.
  6. Brush the heated waffle iron with a little oil and pour in some batter. After about 2 minutes of baking time (depends on the device, so please be careful and check if necessary) carefully remove the waffles. Brush the waffle iron again with oil and pour in some batter again.
  7. Sprinkle the finished waffles with sugar and cinnamon as desired or serve with applesauce.
