Mix together the almonds, flax seeds, 4 tablespoon wheat bran, flour, baking powder and salt. Add the quark and egg whites and mix to a smooth dough. Attention, the dough looks very runny for a bread, more like a sponge cake!
Brush a loaf pan (10 x 30 cm) with water and sprinkle with 1 - 2 tablespoons of wheat bran. Line the bottom of the pan with parchment paper. The two steps are not necessary with a silicone mold, as nothing sticks here. Pour the batter into the loaf pan and sprinkle with pumpkin and sunflower seeds.
Bake at 175 ° C (fan oven) on the middle rack for 50 minutes. Take out of the oven and let rest for 10 minutes, then turn over.
