Instructions

  1. Soak gelatine in cold water for 10 minutes.
  2. Beat eggs, lime zest and juice as well as sugar in a water bath until frothy. Add gelatine to the hot egg mixture and dissolve. Stir in buttermilk.
  3. Chill the mousse and stir again vigorously as soon as the mousse begins to gel. Fill into dessert bowls and refrigerate for at least 5 hours - or better overnight.
