Instructions

  1. Bring the cream with sugar and lime zest to the boil, then simmer gently for about 10 minutes. Soak and squeeze the gelatine according to the instructions on the packet and dissolve it in the still warm cream. If you want, you can pass the whole thing through a sieve to remove the lime zest.
  2. Pour into a bowl and let set in the refrigerator for about 4 hours. Then turn out of the mold, cut into beautiful slices and serve with the berries.
