- Have the butcher cut the bacon so that you can put it nicely on either side in the oven. That means that each side should be roughly the same width.
- Rub very vigorously on all sides with salt, pepper and spices of your choice.
- Place on a baking sheet and simmer in a preheated oven at 140 degrees for 3 hours.
- Turn the roast 90 degrees every half hour.
- Take out and cut open.
- The roast tastes hot, warm and cold. So also great for parties!
