A liver cake with mushrooms and cheese in this recipe is very delicious. The combination of flavorful mushrooms, cheese, and soft liver pancakes will delight your guests. Such an appetizer won’t certainly stay too long on your holiday table.
Put the livers and onion through a meat grinder twice.
Add the eggs, milk, salt, and pepper to the mass. Mix everything thoroughly until homogeneous.
Sift the flour into the liver mass and mix thoroughly. The spread should be not very thick.
I use a frying pan with a diameter of 20 cm. Preheat the frying pan and grease it with vegetable oil. Pour the liver mass into the frying pan and distribute it gently on the bottom.
Fry the liver pancake over medium heat for 2-3 minutes on each side.
Do this with all the mass. Grease the pan with oil before frying each pancake. I got 8 pancakes. Let the pancakes cool down completely.
Peel the rest of the onion and cut it into small dice.
Cut the mushrooms into dice. I left 10 of the smallest mushrooms to decorate the dish.
Heat the vegetable oil in the frying pan and fry the onion for 2-3 minutes.
Add the mushrooms to the pan and brown them slightly until all the liquid evaporates. Add salt and pepper in the process of frying.
Brown the small mushrooms in another pan.
Squeeze the garlic through the press and combine it with mayonnaise.
Grate the cheese on a fine grater.
Finely chop the dill. Leave 2-3 sprigs of dill for decoration.
Mix the cheese and dill.
Place the first pancake on a flat plate or dish and coat it with mayonnaise.
Put the mushroom stuffing (1/4 of the entire stuffing).
Then put the next pancake. Coat it with mayonnaise and put 1/3 of the cheese and dill stuffing. In this way, make the entire cake alternating the layers.
Put the last pancake and coat it with mayonnaise. Decorate the liver cake with the fried mushrooms and dill sprigs. Place the liver cake with mushrooms and cheese into the fridge for at least 1 hour.
