Preheat the oven to 250 degrees. Mix the egg white, egg, protein powder, grated almonds or almond flour, baking powder, vanilla, almond or soy milk and cinnamon. If you like it sweet, you can add a splash of sweetener or stevia.
Line a round springform pan with baking paper. Pour in the dough and smooth it out. Bake for 10 minutes.
Remove from the mold, brush with yoghurt and roll up. It is best to fix it with a skewer. Garnish the roll with a little yoghurt and decorate with fruits or berries if you like.
