Instructions

  1. For the bottom, finely grate the raw cauliflower so that the consistency is reminiscent of small grains of rice. Then add the eggs and 150 g of the grated cheese and lightly salt. Mix the ingredients together to form a slightly crumbly mass.
  2. Cover a tray with baking paper and use a springform pan to shape the dough into a round shape. This is very easy to do with your hands. Make sure that there are no holes in the base of the dough. Bake the prepared dough in the oven (fan oven: 180 ° C, top / bottom heat: 160 ° C) for 25 minutes.
  3. In the meantime, mix the crème fraîche with the rest of the cheese for the topping, season with salt and pepper, cut the onion into thin rings and the paprika into fine strips.
  4. Now spread the crème fraîche on the pre-baked base, cover with onions and paprika and bake in the oven for another 15 minutes.
  5. Tip: I use Tupper`s Quickchef to grate the cauliflower. I add the eggs and cheese to the cauliflower so that I can make the dough in one go. I also do the mass for the topping in the Quickchef. Goes super fast.
