  1. Preheat the oven to 180 ° C fan oven.
  2. Cut the iceberg lettuce into strips. Dice the cocktail tomatoes and set aside.
  3. Put the quark, eggs and 100 g of the grated cheese in a bowl. Salt and pepper and mix with a hand mixer.
  4. Line a baking sheet with parchment paper and spread the mixture over the entire surface, preferably with a spatula. Slide the baking sheet into the middle of the oven and bake the dough for about 20 minutes. Most of the time I develop blisters, which I then pierce with a fork.
  5. The baking time can be used to make the guacamole. If you prefer to pull them through, then prepare them beforehand. Chop the onion finely. Halve the avocado, remove the stone and remove the pulp from the skin with a spoon. Mash it on a plate with a fork. Stir in yogurt, lemon juice and onion. Then press the garlic clove into the mass and season with salt and pepper.
  6. Fry the minced meat until it is crumbly and when it is done stir in the taco seasoning mixture.
  7. At the end of the baking time, take the tray out of the oven and use a spatula to spread the crème fraîche over the entire dough. Spread the minced meat on the lower 2/3 of the dough. Spread the remaining 100 g cheese evenly over the entire dough.
  8. Then put the baking sheet back in the oven. But this time on the topmost rail. Immediately raise the temperature to 250 ° C and switch to grill top heat. The cheese should be nicely melted after about 3 minutes. Take the baking sheet out of the oven. I put it on my ceramic hob and continued working there.
  9. Splot some of the guacamole on the minced meat and spread the rest on the top third of the dough. Spread the iceberg lettuce, corn and tomato cubes on the minced meat. If you like it spicier, you can buy salsa and also add a few blobs of it.
  10. With the help of the baking paper, roll up the dough starting on the minced meat side away from the body. The only reason the upper third is not occupied is that you don`t push everything out forwards when rolling it up.
  11. If there is still lettuce, corn or tomato left over, you could conjure up a small salad as a side dish.
  12. Since my husband does not like corn or tomatoes, these are not shown in my photos. The wrap dough offers a wonderful opportunity to let your imagination run wild and perhaps use it to make a pizza roll or tarte flambée roll and much more.
