Instructions

  1. Preheat the oven to 180 degrees.
  2. Mix all dry ingredients well with a mixer. Important: It is best to sieve baking powder in so that no lumps get into the dough
  3. Add the egg white and vinegar. If there is some egg yolk in the egg white, that`s not so bad. Mix again with the stirring sticks.
  4. Boil the water and then immediately measure it precisely on a kitchen scale (360 ml = 360 g) and carefully pour it into the dough (risk of burns).
  5. Immediately stir the dough vigorously with the mixer until the dough has set. The flea meal will now swell. Knead the dough a little so that everything connects.
  6. Divide the dough into two equal pieces. Shape it into two loaves of bread and sprinkle with sesame seeds. Bake immediately on a baking sheet lined with baking paper in the preheated oven for approx. 70 minutes.
  7. The bread tastes very similar to white bread. Also ideal for toasting or gratinating (Karlsbader Schnitte or Toast Hawaii). This bread is my absolute favorite because it has almost no carbohydrates, is juicy and crispy and is very filling. Furthermore, the flea meal has a lot of fiber and with the almonds a balanced fat / protein combination comes into play.

  9. Due to the high fiber content, you should always drink something with it.
  10. Variations:
  11. - The bread can also be prepared with lukewarm or cold water. Then leave out the baking powder for now and let the finished dough swell for 1 hour. Then sieve the baking powder onto the dough and work it in vigorously. Don`t worry - the bread will rise that way and, in my opinion, will even be a little crispier.
  12. - Bread spices, caraway seeds, nuts, dried tomatoes, herbs, ham, fried onions and / or seeds can be added to enhance the value
  13. - For better taste, simply use sourdough flour instead of the spelled flour or add a few yeast flakes
  14. - The whole spelled flour can be omitted, then take 10g almonds and 10g flea seed flour more. The bread will then be less crispy.
  15. - I have not yet tried to swap the wholemeal flour for gluten, the amount of 20g would be more than acceptable on this bread. Then it should get even crisper and fluffier
  16. - You can make a very tasty chocolate cream (pudding) with the rest of the egg yolk, just have a look at my other recipes
  17. - Try baking breadsticks from the dough. Shape the dough ready for baking into small rolls, brush with egg yolk and then lightly sprinkle with various seeds and cheese.
