At the same time, cook the cheese tortellini until just under cooked, strain and transfer to a large bowl. Pour the vegetable mixture on top, mix well and mix in the freshly chopped tomatoes, as well as basil leaves and chopped mozzarella.
Mix well, let it steep and season with salt and pepper before serving.
