- Quarter and core the zucchini and cut into fine strips. Also cut the onion into very fine strips.
- Heat the rapeseed oil in a pan and fry the onion in it. Press the garlic and add it with the oregano.
- Spread the sugar over it and let it caramelize briefly. Then add the zucchini and fry with it. Season with salt, pepper and chilli.
- Deglaze the whole thing with a good dash of vinegar and let it boil down over high heat until the liquid has almost evaporated.
- Then add the cream and let the vegetables simmer on a low heat. Season again with salt, pepper and balsamic vinegar.
- Finally, remove the pan from the heat and stir in the cream, the diced ham and the freshly chopped basil.
