Instructions

  1. Quarter and core the zucchini and cut into fine strips. Also cut the onion into very fine strips.
  2. Heat the rapeseed oil in a pan and fry the onion in it. Press the garlic and add it with the oregano.
  3. Spread the sugar over it and let it caramelize briefly. Then add the zucchini and fry with it. Season with salt, pepper and chilli.
  4. Deglaze the whole thing with a good dash of vinegar and let it boil down over high heat until the liquid has almost evaporated.
  5. Then add the cream and let the vegetables simmer on a low heat. Season again with salt, pepper and balsamic vinegar.
  6. Finally, remove the pan from the heat and stir in the cream, the diced ham and the freshly chopped basil.
