Separate the meat from the bone. Cut the lamb and chicken fillet into slices for twisting in a meat grinder.

Prepare a bowl of water and a skewer to form a kebab.
We form a kebab on a skewer. To do this, we moisten our hands with water, take a little minced meat and form a sausage around the skewer, 4-5 cm in diameter. The minced meat should fit snugly to the skewer. Be sure to pinch the minced meat tightly along the edges of the kebab.
To prevent the kebab from falling off the skewer during cooking on the grill (this often happens, especially with beginners), I put the kebab on skewers on the wire rack, which I advise you.
Pour coal on the grill, light the fire. When the coals are burned out, pour water over the flame so that there is no open fire.
