Instructions

  1. Soak the chickpeas in cold water for 12 hours. Then rinse with fresh cold water and cover with water for about 1 hour and simmer with a bay leaf. Then remove the bay leaf, pour off the water and let it cool down.
  2. In the meantime, wash the peppers, pat dry, core and cut into small pieces. Peel and core the avocados and cut them into small pieces. Halve the olives. Mix the chickpeas, peppers, avocados and olives together.
  3. Now prepare a dressing of olive oil, lime juice, coriander and lemongrass by mixing everything. Pour over the vegetables, mix and finally add salt and pepper, if necessary. add sugar to taste.
