Heat the cardamom, anise and clove without fat in a non-stick pan until they start to smell. Dissolve the spices in a mortar (do not grate too finely).
Pour the spices into a tea infuser and bring to the boil with the milk. Continue to draw the spiced milk, but don`t let it boil anymore. Remove the tea infuser with the spices from the milk. In the meantime, grate the chocolate finely.
Stir enough cocoa powder into the milk until it turns a nice dark color. Add the grated chocolate and stir well. Add the honey and season with ginger and cinnamon to taste.
Pour into a mug, add a dollop of cream and possibly dust a good pinch of cinnamon over it, then serve.
