Instructions

  1. Sort the herbs, wash, drain, briefly scald or blanch and chop.
  2. Mix the quark with the eggs, flour, grated cheese and spices, then mix in the herbs. Use a wet teaspoon to cut off a sample socket and let it simmer in simmering salt water for about 3-5 minutes. Holds them together - process the entire dough like this. If the dough is still too soft (depending on the moisture content of the quark and herbs) add a little flour, but the dough should remain sticky. If all the cams do not fit into the pot at once, the finished ones can be kept warm in the oven at around 100 ° C.
  3. When all is done, the cams are served e.g., with chunky tomato sauce or some brown butter and parmesan shavings.
  4. * There are e.g., wild garlic, nettles, daisies, ground elder, dandelions, melde, red clover, chives, dead nettles, chickweed, willowherb (narrow-leaved), white goosefoot, meadow rennet, - depending on appetite, taste and availability. We mean 3 large double hands full - or about 200-300 g, it doesn`t really matter. If you don`t know or find any wild herbs, you can also use spinach.
