Wash and dry organic mandarins or peel a normal mandarine. Cut into 6 slices and halve if necessary. Peel the other mandarins so that the white skin is completely removed. Cut out the fillets between the separating skins, if necessary chop them roughly.
Roughly chop the cookies. Mix the quark, sugar and vanilla sugar together. Whip the cream until stiff, fold in.
Layer quark, cookies and tangerines in 6 glasses. Finish with a dollop of cream. Decorate with tangerine slices and chocolate rolls.
