Bring coconut milk, mango puree (of course, peel fresh mangoes and puree the pulp) and ginger to the boil and stir well.
Now add a little salt and sugar and, if you like, some chili powder. Take the pot off the stove and add the peppermint stalks with the leaves to the soup and stir, then let stand for about 5 minutes. Then remove the ginger and peppermint.
Put the soup in a cool place. But please do not serve too cold.
