Instructions

  1. Wash and drain the lamb`s lettuce, alternatively use a salad spinner. Prepared as a main course, spread over 2 large plates. Or you can portion the salad in smaller bowls for up to 8 people as a side dish or starter.
  2. Peel the mango and separate the pulp from the core, then cut into pieces that are not too small. Dice the feta cheese as well.
  3. Prepare the dressing from pumpkin seed oil, honey, mustard and a little apple cider vinegar, which is then seasoned with salt and pepper. You can of course change the quantity to suit your taste.
  4. Spread the mango and feta on the salad. Also the pine nuts, which you lightly toast in a pan without oil.
  5. Whether you mix the salad and dressing well or not is up to you. I recommend a fresh ciabatta with it.
