Peel the mango (I prefer a slightly unripe, hard mango) and cut into pieces, as well as the mozzarella. Halve the cocktail tomatoes.
Mix lemon juice, white balsamic vinegar, olive oil, water, a little mustard and honey into a marinade, season with salt, pepper and fresh herbs to taste.
Mix the mango, mozzarella and cocktail tomatoes with the marinade and let it steep for a few minutes. Before serving, add the rocket and mix once.
