Mix the buttermilk and chia seeds with the whisk. Set aside and let soak for approx. 15 minutes.
Peel the mango and cut along the stone. Cut the pulp into large cubes, except for 3 wedges. Puree the mango cubes with the juice of one lime, 1.5 tablespoons of maple syrup and the cinnamon.
Pour the mashed mango into glasses. Mix the buttermilk mixture with the juice of a lime and the remaining maple syrup with a whisk. Put on the mango puree. Garnish with the remaining mango and dust with cinnamon to finish.
