Instructions

  1. Mix the olive oil, vinegar, orange juice, sherry, chilli pepper, pepper and salt together well.
  2. Wash the lettuce hearts, if necessary, and place on plates.
  3. Peel the mango and cut into even wedges, place on the lettuce, top with the crayfish tails.
  4. Spread the dressing on top just before serving, decorate with parsley and serve.
