Cut the endive into strips, wash and let steep in lukewarm water for 10 minutes, then spin dry. Grate the carrot, sort the sprouts. Cut the spring onions into thin rings. Peel the mango and cut into strips.
Remove a teaspoon of the zest from the oranges, squeeze the oranges, mix the juice with all the other dressing ingredients and the zest.
Mix the endive, sprouts, carrot, onion rings and mango and stir in the salad dressing. It doesn`t harm the salad if it can pull something through.
