Wash, clean and spin dry the lamb`s lettuce. Remove the peel and core of the mango and cut the meat into cubes. Finely dice the onion. For the vinaigrette, mix together vinegar, olive oil and honey, season with a little salt. Mix everything together in a salad bowl. Tip: The mango has a flat, oval core. If you first split it lengthways and cut past the core on both sides, the resulting halves can be easily cut into gaps and detached from the shell. Close to the core you have to try a little and cut off pieces.
