Wash, clean and spin dry the rocket. Wash the basil, shake dry and pluck the leaves off. Clean and wash the spring onions and cut into rings. Peel the mango, cut the pulp from the stone and cut into thin wedges. Drain the mozzarella, cut in half crosswise and cut into slices.
Arrange the mozzarella, mango, spring onions and rocket on a platter. Scatter the basil leaves on top.
Mix the honey with the vinegar, oil and 1 tablespoon water well. Season with salt and pepper and drizzle the dressing over the salad.
