Instructions

  1. Peel the mango, cut the flesh from the core and dice. Halve the cucumber lengthways, remove the seeds with a teaspoon and then dice the cucumber as well. Core the peppers, remove the partitions and cut to size. Clean and wash the spring onions and cut into rings. Finely dice the chilli peppers without the seeds or partitions.
  2. Mix the juice, ginger, agave syrup and oil into a dressing and season with salt and pepper.
  3. Mix the fruit and vegetables with the dressing, let it steep a little and season to taste. Fold in the coriander and peanuts just before serving.
