Instructions

  1. Wash the limes with hot water, completely rub the skin of one and squeeze both. Wash, core and finely chop the chilli. Mix together the lime zest, lime juice, sugar and soy sauce until the sugar has dissolved. Fold in the peanut oil and season with a little salt.
  2. Peel the peanuts and roast them in a pan without fat. Immediately remove from the pan and let cool down.
  3. Peel and core the mangoes and cut the flesh into strips. Wash and core the peppers, peel with a peeler if necessary and cut into thin strips. Wash, clean, peel and cut the carrot into very fine strips. Wash and clean the spring onions and cut into fine rings. Wash the rocket, spin dry, clean and pluck into large pieces. Wash the mint, spin dry and roughly chop the leaves.
  4. Mix all ingredients well in a bowl. Pour the dressing over it and let it steep a little.
  5. Arrange on plates, sprinkle with the roasted peanuts and place a few whole mint leaves on top as a decoration.
