Instructions

  1. Peel the mango, cut the flesh from the core and cut into small pieces. Peel and finely grate the carrot and cut the spring onion into very thin rings. Put everything in a bowl. Mix the juice of the lime with the brown sugar, the pitted chilli pepper cut into small strips, the fish sauce and the sweet chilli sauce. Pour the dressing over the ingredients in the bowl, mix in well and let it soak for at least 1 hour.
