Peel, halve and slice the mangoes. Halve the mozzarella balls and also cut into slices. Garnish the mango and mozzarella on the plates in a tile shape. For the dressing, finely chop the lemongrass, core the chili peppers and cut into rings. Mix the lime zest, lime juice, sugar, lemongrass and chilli with the olive oil.
Spread the dressing over the plates and garnish with coriander leaves.
