Instructions

  5. Now add the remaining milk, flour, eggs, butter, sugar, flavors (i.e. the pulp of the vanilla pod and the zest of the lemon), the salt and the remaining yeast and create a smooth (lump-free) dough.
  6. Preheat the oven to 240 ° O / U heat (with circulating air heat there is always a risk that the baked goods will quickly dry out).
  7. Let it rest for another hour and then create the wake-up men / mare guys you want (I always prick 20 balls from the dough, then roll them and press the roll with the edge of the hand flat at the point where the neck should be. Then press I flatten them and cut the arms and legs with a spatula or croissant)
  8. Before baking, let the pastries stand until fully cooked (approx. Twice their size), carefully whisk together the egg yolk and milk, scrape off, insert raisins for eyes, mouth and coat buttons and then bake until golden yellow / brown.
  9. The baking time is approx. 12 - 15 minutes as the baking temperature falls (reduce by 20 ° every 4 minutes).   10. I prefer to bake yeast dough a little shorter and therefore more juicy than too long and too dry.
  11. Immediately after the end of baking, shine again with a brush and whole milk.
