Instructions

  1. Bring the quinoa in the vegetable stock to the boil and cook covered over low heat for 15 minutes. In the meantime, peel the mango and cut in half along the core to remove the core. Then you can dice the mango and cut the halloumi into fine slices. As soon as the quinoa is done, it is poured into a greased baking dish. First distribute the mango cubes evenly on top, then put the halloumi slices on top like a roof tile to finish off. Baked in an oven preheated to 175 degrees for about 30 minutes.
