Allow frozen tubes to thaw (clean if necessary) and pat dry.
Mix 5 tablespoons of olive oil, lemon juice, chilli flakes, garlic granules and sea salt into a marinade.
Score the squid tubes diagonally on the surface (chisel), then place in the marinade and leave to marinate for at least 2 hours.
Then bring salted water to the boil in a saucepan (add some of the marinade to the cooking water), let the squid tubes boil for 2-3 minutes, then take them off the fire and let them steep for 10 minutes.
In the meantime, cut the garlic into small cubes and chop the parsley. In a pan, heat the remaining marinade and the remaining olive oil with the garlic and parsley. Lift the tubes out of the water and cut into bite-sized pieces, put the pieces in the pan and bring to the boil (if necessary, add a little more of the cooking water). Season with fleur de sel and serve with a baguette.
This amount is enough for 2 people as a main course and for 4 as a starter!
