Instructions

  1. At the beginning, drain the pineapple using a sieve and collect the juice for the marinade.
  2. Dab the chicken and cut into typical skewer bites. Then thread on wooden skewers and e.g., put them in a baking dish in which we will let them steep with the marinade later.
  3. For the marinade, put the pineapple juice collected in a bowl and mix with the finely chopped onion, chopped garlic, cinnamon, paprika powder and sambal oelek. Since we like to have a little more kick in our food, I like to season a little stronger with paprika and sambal. Finally, season with salt and pepper.
  4. Now spread the marinade over the chicken skewers and let the skewers steep.
  5. I let it steep for about 10 minutes, then turn it over and let it steep again for 10 minutes.
  6. In the meantime, clean the rocket and place on the plates as a base. Spread the drained pineapple on top to taste. If you like, you can also add cherry tomatoes.
  7. When the chicken skewers are well done, we take them out of the marinade and set them aside on a plate. They usually don`t need any additional seasoning then.
  8. Reduce the marinade in a pan with a little oil so that it has a pleasant consistency. Now take the marinade out of the pan and set aside in a container. Now brown the chicken skewers well on both sides in the pan.
  9. Arrange the chicken skewers on the rocket and pineapple bed and drizzle with the thickened marinade.
  10. Tip: If you don`t like pineapples, you can replace them with oranges. Simply use orange juice as a marinade and arrange orange fillets on top of the rocket.
