Finely chop the sun-dried tomatoes, anchovy fillets, garlic, and parsley. Add to the minced meat and mix together well. Season with salt and pepper. Form 2 patties of approximately 200 g each. Cover with cling film and refrigerate for 8-10 hours.
Preheat the oven to 200°C (392°F). Line an oven tray with baking paper and place the patties on top. Bake for 15-20 minutes until cooked through. While the patties cook in the oven, fry the bacon strips over medium heat until crispy, about 5-10 minutes, then set aside.
Wipe the excess bacon fat from the pan using kitchen paper. Place the burger buns cut-side down in the same pan over medium heat and fry for 2-3 minutes until crispy.
Place a hot patty on the bottom half of each bun. Top with bacon slices, pickled cucumber slices, and thin onion rings. Place the top bun half on top and serve immediately.
