Halve, core, eighth, peel the net melon and cut into approx. 3 cm cubes or cut out balls. Wash the mint, pat dry and cut into fine strips. Wash and finely chop the chilli pepper (with or without seeds, depending on how spicy you like it).
Mix together the olive oil, lemon juice and a little zest, salt, sugar, mint and chiles, add to the melon and mix everything carefully. Let it steep for at least 30 minutes.
