Instructions

  1. Clean the mushrooms, cover with water in a saucepan, without spices and salt (important! - because the spices will be added later in the marinade) cook for about 20 minutes, drain over a sieve.
  2. For the marinade, add salt, sugar, pepper, allspice, bay leaf and vinegar with 1 liter of water and bring to the boil. Put the mushrooms in the boiling marinade and simmer for about 15 minutes.
  3. Then fill the mushrooms with the marinade into sterile screw-top jars while still hot, close the jars, turn them upside down, cover with a towel and let them cool slowly overnight. Let it steep for at least 1 - 2 days.
  4. Mushrooms marinated in this way can be kept for about 1 year.
  5. To serve, drain the mushrooms and pour a thinly sliced onion and 1 tablespoon of oil over them.
  6. Marinated mushrooms are eaten like antipasti in Ukraine and should not be missing on the festive table.
