Instructions

  1. Preheat the oven to 80 degrees. Heat the baking sheet in it and lightly grease it.
  2. Clean the salmon fillet and pat dry. Place skin down on the warmed baking sheet. Season with salt and pepper. Rinse the basil and pat dry. Pluck the leaves from five stalks of basil, chop finely and spread on the salmon. Put the baking sheet back in the oven and cook for 40 minutes.
  3. Wash lemons with hot water and rub dry. Peel the peel thinly with a peeler. Squeeze out the juice. Pluck the remaining basil leaves.
  4. Check the salmon fillet with a fork to see if it is done. It should still be very juicy. Place the salmon fillet on a plate and marinate with olive oil and lemon juice. Decorate with lemon zest and basil. Serve lukewarm.
  5. It goes well with baguette, a fine green salad and a dry white wine. Also great for a cold buffet.
