Bring the balsamic vinegar, apple syrup and orange juice to the boil and reduce to a syrupy level over a low heat, stirring constantly, for about 5 minutes.
Wash the strawberries, pat dry, clean and cut in half or quarter, depending on the size of the strawberries. Let the balsamic vinegar syrup cool down a bit and pour over the strawberries, mix gently. Garnish with orange peel and mint leaves.
