Instructions

  1. Place the tuna fillets in a baking dish. Mix a marinade of honey, vinegar, soy sauce, sesame oil, curry paste and coriander. Finely chop the ginger, garlic and spring onion and add to the marinade. Spread the whole thing over the fish and put the pan in the refrigerator for at least 2 hours.
  2. Then remove the fillets from the marinade, drain them a little and sear them on both sides in a grill pan. Then continue cooking on a low heat for 3 - 5 minutes (depending on the thickness of the fillets).
  3. Then take the fish out of the pan and keep it warm. Put the rest of the marinade in the pan and let it reduce a little.
  4. Either arrange the tuna on a bed of lettuce with the marinade as a lukewarm dressing or serve with basmati rice on preheated plates.
