- Wash the fillets and brush with pepper, salt, paprika, oil and thyme and put in the refrigerator for at least an hour.
- Then fry briefly on both sides in a grill pan and put in the oven at approx. 100 degrees for another 10 minutes.
- Wash the rocket and place on a plate in portions. Pour salt, pepper and balsamic vinegar over it and then sprinkle the hard cheese over it.
- Briefly toast the pine nuts in a pan over low heat until they are golden brown.
- Place the fillet on the bed of rocket and sprinkle with pine nuts.
