Instructions

  1. Soak the beans in water the day before.
  2. Boil the beans soaked the evening before in salted water for about 40-50 minutes over low heat, not too soft and let cool or take white beans out of the can or glass.
  3. Peel the onions and cut into fine rings. Peel and squeeze the garlic clove.
  4. Mix the onions and garlic with the olive oil and vinegar. Drain the beans well and add. Season with salt and pepper and let steep for at least an hour.
  5. Finely chop the mint and carefully fold in, possibly leaving a few leaves for garnish.
  6. I also serve Parma ham and ciabatta bread.
