Instructions

  1. Preheat oven to 175°C (350°F). Line 2 baking sheets with parchment paper. Mix all dough ingredients together. Using 2 tablespoons, distribute approximately 20 portions of dough on the trays, spacing them roughly 1-2 cm apart. Bake each tray individually for 12 minutes until the cakes are set. Remove from oven and cool the cakes on the tray for 2-3 minutes.
  2. For the filling, whisk all filling ingredients together and refrigerate until well chilled. Transfer the filling to a piping bag and pipe onto the underside of half of the cooled cakes. Top each with a remaining cake half to form sandwich cookies.
  3. Decorate the sides of the whoopies with sugar pearls or chocolate shavings, if desired.
