Instructions

  1. Wash and quarter the plums, removing the core. Preheat the oven (hot air) to 150 °. Line a springform pan with baking paper, butter the edge and sprinkle thinly with flour. Have 4 mixing bowls ready.
  2. Separate eggs. In the largest bowl, beat the egg yolks with sugar and amaretto until foamy. This can take 20-30 minutes so that the mixture has sufficient firmness for further processing. Melt the butter (e.g. in the microwave at 450 W so that the butter does not get too hot or brown). Break the marzipan into pieces and mix with the flour, baking powder and butter until smooth. In the 3rd bowl, beat the egg white until it keeps its shape on the blender. Use a whisk (NOT the mixer!) To stir the marzipan mixture into the egg yolk. Then carefully fold in the egg white. Immediately fill the springform pan and bake for 20 minutes.
  3. During this time, mix the crumble ingredients well in the last bowl with 2 forks. Cover the prebaked base with the plum quarters, sprinkle the crumble on top and bake for another 20 minutes on top heat. After cooling, sprinkle with powdered sugar.
  4. You can also serve the cake with whipped cream.
