Wash and clean the strawberries and cut into small cubes (put some strawberries aside for decoration). Beat the egg white separated from the yolk with 1 tablespoon sugar until stiff. Beat the cream with 1 tablespoon of sugar and the cream stiffener until stiff. Beat the egg yolks with 2 tablespoons of sugar until frothy. Stir in a dash of strawberry lime.
Mix the mascarpone in a bowl until creamy, then stir in the egg yolk mixture first, then the whipped cream. Finally, carefully fold in the egg whites. Put the amarettini in a breakfast bag and crush them with a rolling pin or a bottle.
First fill four dessert glasses with a layer of amarettini crumbs, then alternate layers of strawberry cubes and cream. Make sure to end with a layer of cream. Finally, sprinkle a thick layer of cane sugar over the top. Let it sit for at least 2 hours, so you can prepare well. Before serving, place a whole strawberry on the edge of the glass as a decoration.
Tips:
If there are no fresh strawberries, you can also use frozen strawberries, raspberries or other berries. The recipe can also be varied with other fresh fruits (peaches, nectarines).
