Mix flour with wholemeal flour (if you don`t have one in the house, then it only works with normal flour), baking powder, baking soda, nuts and spices.
Beat the egg in a second bowl and mix with the sugar, buttermilk, oil, lemon juice and the carrots. Fold in the flour.
Place paper liners in a muffin tin and pour in the batter.
Bake in a preheated oven (fan oven 160 °) for approx. 20-25 minutes until brown.
Decorate with icing or powdered sugar if necessary. Great with marzipan beets.
