- Soak herring fillets for an hour.
- Squeeze the lemons and mix the juice with the yogurt, cream, sugar, pepper and salt. Add juniper berries, cloves and bay leaves.
- Cut the onions into fine rings, cut the apples into eighths, remove the core and cut into thin slices. Mix the onions and apples into the sauce.
- Drain the matjes fillets and pour the sauce over the fish fillets.
- Cover and leave to steep in the refrigerator for at least 24 hours.
- Small jacket potatoes also taste good.
